Wholegrain flour stoneground from emmer wheat, a forerunner of many modern wheat varieties. With a slight sweet flavour emmer makes delicious baked goods. Emmer, triticum dicoccum, is one of the first grains cultivated by mankind & was one of the main cereal foods of pre-history. Today emmer has been re-discovered & is popular in many parts of Europe. Baking with Emmer Flour Use emmer flour in recipes calling for wholemeal flour. A little extra liquid may be needed when using emmer flour in bread & cake recipes. At Doves Farm we make biscuits, cookies & a large range of bread, cake & speciality flours. Emmer is a tall, bearded wheat whose history can be traced back to the wild grasses collected by hunter gatherers & then domesticated to create modern wheat crops. It is a hulled wheat with inedible husks, called glumes, that encase the grain & have to be mechanically removed before the grain can be milled or eaten. It has a slightly sweet & nutty flavour, which makes it great to use in baked goods such as cookies, cakes or muffins. We are also passionate about home baking & believe that what we eat today will affect our health & well-being tomorrow. Baking bread, cookies & cakes at home is a satisfying & rewarding activity. You can choose the best, local & seasonal ingredients, & know what goes into your family's food.
