Passata with Basil is an Italian classic. It can be used for the same kind of dishes that you would use chopped tomatoes for...pasta sauces, soups, stews etc. How do we make it? Well, we crush a load of tomatoes & then push them through a seive to remove the peel & seeds. That means you get a smooth & seedless tomato puree. Then we add fresh basil & nothing else. Why? Passata Rustica is the king of the passatas! Again, it can be used for the same kind of dishes that you use chopped tomatoes for...pasta sauces, soups, stews etc. How do we make it? Well, we crush a load of tomatoes & then push them through a seive to remove the peel & seeds. That means you get a smooth & seedless tomato puree. What makes Rustica different from the other passatas is that the seive size is bigger giving you a thicker consistency of product. To make sure the product still doesn't have any seeds or peel in it we have to be careful to remove all of those things before it gets seived. This is more labour intensive but it results in a higher grade of product...just that little bit better than normal passata. The extra care taken to make the Passata Rustica means that it is a little dearer...but then it is better quality. ...

Fantastic. Capers have always been linked with medicine, health & spectacularness. They are said to be especially brilliant for your liver & kidney. Puttanesca hey! The word is literally derived from the Italian word for whore...puttana. A bit rude really but at Mr Organic we're not shy of a bit of naughtyness. Puttana also means worthless & apparently the recipe was just chucked together using the bits & bobs they had lying around. Imagine that...lucky really that in the Naples region of Italy where Puttanesca comes from, they had some tomatoes, capers, & olives lying around. A pretty good combination! Our recipe is pretty traditional & we don't add any anchovy which can sometimes be used. We do add a pinch of chilli which we think enhances the complimentary flavours of the other ingredients. ...
