Passata Rustica is the king of the passatas! Again, it can be used for the same kind of dishes that you use chopped tomatoes for...pasta sauces, soups, stews etc. How do we make it? Well, we crush a load of tomatoes & then push them through a seive to remove the peel & seeds. That means you get a smooth & seedless tomato puree. What makes Rustica different from the other passatas is that the seive size is bigger giving you a thicker consistency of product. To make sure the product still doesn't have any seeds or peel in it we have to be careful to remove all of those things before it gets seived. This is more labour intensive but it results in a higher grade of product...just that little bit better than normal passata. The extra care taken to make the Passata Rustica means that it is a little dearer...but then it is better quality.
